10-MINUTE VEGGIE FRIED RICE

I love anything quick and easy, so this recipe is especially high on my go-to list. Most of the ingredients are things you can easily have on stock in your pantry and freezer, making it a great option for when you need to have dinner on the table in 10 minutes but don’t have a plan. Feel free to add a protein option, like chicken, shrimp, or tofu.

1 tablespoon canola oil

2 cups frozen peas and carrots

1/2 cup raw unsalted whole cashews

1 (8-ounce) can pineapple chunks (in 100% juice), drained

1 teaspoon salt

11/2 teaspoons ground ginger

1 teaspoon garlic powder

2 large eggs

6 cups cooked brown rice

1/2 cup low-sodium soy sauce

1/2 cup diced green onion

1. Warm oil in a large pan over medium heat. Add peas and carrots; stir 1 minute. Add cashews and pineapple. Top with salt, ginger, and garlic powder; continue to sauté about 5 minutes.

2. Push mixture to side of pan; drop in eggs and scramble until cooked, about 2 minutes.

3. Add rice and soy sauce; sauté 1 minute. Remove from heat. Top with green onion and serve.
